Challenge 3(week 6 Countdown to Christmas)

(on a side note.....I will be working on updating the challenge entries today and tomorrow)

TOTALLY RANDOM......this seriously just fell out of no where, and is TOTALLY off topic(stamping topic, but we'll do it anyway)!

I received my order yesterday with all the nuts & things to make my Christmas treats, I can taste them now.

Do you have recipes that you make ONLY at Christmas, and by the time the Christmas season is here you are seriously craving them? Well that's me! This is FOR SURE a GOOD THING........can't imagine having that much sugar year round!

Here's how this challenge will work:
  1. 1 entry for a list of your favorite 5 Christmas treats(edible). Does not have to be treats you make yourself. Treats can be main course, beverage, desserts, sweets, anything Christmas!
  2. 1 entry for sharing a favorite recipe, one you make, and make only at Christmas. If there is a bit of history with your recipe, please share that as well!

2. perogies .. now it's up to me to carry on that tradition .. yikes!

This one wasn't on my list - but I get asked for it all the time.

Cookie sheet banana cake

1 cup margarine
1/2 cup water
2 cups flour
1 1/2 cup white sugar
1/2 cup packed brown sugar
1 tsp baking soda
2 eggs
1 cup mashed bananas
1/2 cup sour milk (I add a bit of lemon juice to the milk)
1 tsp vanilla

Boil margarine and water. Mix the rest of wet ingredients, then add dry indredients and water mixture. Beat well.
15x10 pan (I line it with parchment paper). 350 degrees for about 20 - 22 minutes.

Icing
8 oz cream cheese
1/2 cup softened butter
1 tsp vanilla
3 1/2 cups icing sugar

My favorite holiday treats:
#1.Shortbread cookies - I use the recipe on the back of the Canada cornstarch box and have a little press to put a snowflake design on their top.
#2.Christmas oranges
#3.Lefse
#4.Turtles chocolates
#5.Fruitcake and Mincemeat pie- These I don't like a lot of but am starting to get nostalgic in my old age and feel like you should have them at Christmas. Christmas is the only time I have them and I still relate them to Christmas from growing up.

Hi Donna - my five favorites for Christmas:
1. Almond Roca
2. Citrus Marinade
3. Christmas Cake (as dark as possible with lots of rum to make it moist)
4. turkey (MMMMMMM)
5. peppernutter cookies (Danish)

And my recipe for Citrus Marinade:

(amounts can be adjusted, depending on how much you need)
-1 dozen grapefruits
-3 cans mandarin orange segments (drained)
-8 oz. jar marischino cherries (reserve liquid)
-1/4 cup liquid honey
-1/2 tsp peppermint flavouring

Cut skin and all white membrane off of grapefruits: Using sharp knife, insert blade down each dividing membrane and remove each segment of grapefruit. Discard remaining membrane. Place grapefruits in large bowl. Add drained oranges. Cut cherries into halves or quarters, add to bowl. Add liquid from cherries, warmed honey and peppermint flavouring. Mix well and refrigerate. Can be used for breakfast or dessert at any meal.
Variations: Devein fresh oranges instead of using canned segments. Experiment with amount of honey and flavouring to suit your taste.
Keeps well for 2 to 3 weeks in the fridge.

One more thing:
The history behind the Citrus Marinade:
When I was about 20 years old and newly married, we were visiting my husbands folks in BC. On Christmas morning I asked my mom-in-law if there was anything I could do to help. She asked me to cut up the grapefruit (as in the recipe I shared). I had not a clue how to do this, but she had faith in me and gently guided me along, only giving advise when I was having trouble. Let me tell you, learning how to do it is a skill that takes much practice. But Geney was a woman who always "knew" you could do anything. For her, it was all about trust and belief in a person. As I got to know her better and had children of my own, I saw that belief in people come out when she interacted with my kids. I miss her so....

My favourites: candied sweet potatoes, sweet & sour red cabbage, caramel pudding, ris a l'amande, and poppycock
ris a l'amande
1 C rice
3 C milk (don't overcook)
When boiled add 1 envelope gelatin dissolved in 2T cold water, put in hot rice. Whip 1C cream with 1/2 C sugar and vanilla. Mix this in when rice is cooled. This is best left standing overnight. Serve with strawberry or raspberry sauce.

This is a traditional Danish dessert. Chopped almonds are added along with one whole almond. The luck person who gets the whole almond is presented with a special gift. We did this on Christmas eve.

Man o man...went to get the recipe & ended up tidying the kitchen!

I could make this any time of year, but I only do at Christmas!

Oreo cookie Slice
2 eggs (beaten)
2 tsp. Vanilla
1 cup butter
1 box (400gm) Oreo crumbs
1 cup brown sugar

Melt butter & brown sugar. Bring to boil. Take off heat. Add eggs, vanilla & crumbs (be careful not to scramble eggs!)Press into 9x9 pan. Cool in fridge.

Icing: 1/3 cup soft margarine
1 tsp. vanilla
1 egg
2 cups icing sugar

Combine the above in a mixing bowl with a beater. Spread over base. Chill. Keep in fridge to maintain shape.

Have no idea the calorie count & don't want to know! :) Kellie

My favorite treats at the holidays are
1. Tiger Butter
2. Sugar Cookies
3. Fudge (Mint flavored)
4. Rum balls (real rum)
5. Ice Box cookies

I never had traditions until my tween years so my favorite one from them was the stocking on christmas day and the making of tiger butter. White chocolate and peanut butter who wouldn't love it...it really is a science. You take double boil white chocolate and add peanut butter until you get the right colour if you add to much peanut butter it won't set and you will need to add more chocolate to it. When you have it set Drizzle dark chocolate over top of it and you are done. You can then brake it apart into ediable pieces and enjoy. Be careful it is addicting.
